It is made from a heritage wheat which is extruded through a bronze die and processed by hand in small batches. Fusilli are a variety of pasta that are formed into a corkscrew shape. Fusilli loosely translates to "spindle" in Italian. Fusilli is sometimes known as Rotini in the United States. This noodle works fantastic in baked pasta recipes!
